From the archives: In this video, Marisa McClellan demonstrates how to make an apricot lavender butter using honey instead of sugar. Fruit butters are similar to jams as the fruit is cooked down and but it's also often run through a sieve for extra smoothness. Adding honey to the apricots, says McClellan, adds a gentle sweetness without overwhelming the natural flavor of the fruit. This recipe is from McClellan's book, Preserving By The Pint.
